The most important due diligence question in any bakery acquisition is: can this business produce its core products at consistent quality without the selling owner present? Bakeries where the answer is clearly yes because recipes are documented, production staff are trained and stable, and quality systems are institutionalized command meaningfully higher multiples than those where the answer is ambiguous.

Recipe Documentation Is Non-Negotiable
